Merlin Franco, Assistant Professor and Deputy Director of the Institute of Asian Studies at Universiti Brunei Darussalam (IAS @ UBD), has just published a new article on \u201cPersistence of the Salty-Sweet Nipah Sugar in the Popular Foodways of Brunei Darussalam.\u201d<\/p><p>Co-authored with Nurzahidah Bakar and published in the <em>Journal of Ethnobiology<\/em>, the paper examines the position of <em>gula anau<\/em>, a sweetener obtained from the mangrove palm nipah (<em>Nypa fruticans<\/em>), in the popular foodways of contemporary Brunei.<\/p><p>Important as a \u201cfamine food\u201d during the period of Japanese occupation during World War II, <em>gula anau<\/em> continues to sweeten drinks traditional snacks, known as <em>kuih<\/em>, even though white sugar has come to predominate in other foods.<\/p><p>In this paper, the authors seek to understand this persistence of <em>gula anau<\/em> in the popular foodways of Brunei Darussalam.<\/p><p>For more information about \u201cPersistence of the Salty-Sweet Nipah Sugar in the Popular Foodways of Brunei Darussalam,\u201d please see the abstract below or visit <a href=\"https:\/\/bioone.org\/journals\/journal-of-ethnobiology\/volume-40\/issue-3\/0278-0771-40.3.368\/Persistence-of-the-Salty-Sweet-Nipah-Sugar-in-the-Popular\/10.2993\/0278-0771-40.3.368.short\">the <em>Journal of Ethnobiology<\/em> website<\/a>.<\/p><p>Citation: F.
